Select a mango pulper machine by maturity, destoning and puree acceptance.
A mango process must protect the puree from peel, latex, bitter material and stone fragments while recovering useful flesh. The preparation and destoning route should be fixed before final screen selection.
Sort the fruit before testing the machine
Document variety, ripeness, size distribution, damage and feed temperature. These conditions affect flesh adhesion, softness and the load placed on destoning and pulping equipment.
Control peel, latex and stone carryover
The process route should state washing, trimming, optional softening and how stones are removed. Trial samples should be inspected for peel, fibres and stone fragments as well as smoothness.
Define puree acceptance beyond appearance
Record sampling time, screen settings, particle or texture method, temperature and reject composition. Colour or a single photograph cannot establish recovery or stable operation.

Questions before a trial
Should mango be heated before pulping?
It depends on the process and quality target. Heating can soften fruit and affect enzymes and microbial load, but time and temperature must be defined for the product.
Can one screen make finished mango puree?
Possibly for a defined feed and texture, but many duties benefit from separating destoning or coarse pulping from fine refining.
What is the most important reject check?
Confirm stone integrity and quantify useful flesh remaining on stones and other rejects.
